Our first journal entry featuring our Super greens salad. Most people I come across have some sort of gut health issue, so here’s a nourishing and versatile meal that will also get you organised for the work week ahead.
INGREDIENTS:
Kale (3 bunches of leaves, taken off the stalk)
1 cup parsley, finely chopped
1 thinly sliced zuchini
1 cup fennel, finely chopped
1/4 cup roasted almonds
1/4 cup Parmesan or Goats cheese
3 boiled eggs
1/4 cup grated apple
Dressing
half a Lemon juice
4 tsp olive oil
2 tbsp mustard
3 tbsp balsamic vinegar
Pinch of salt and pepper
Method
1. chop all ingredients and add to your salad bowl
2. Add dressing ingredients to a glass jar and shake to combine
3. Pour dressing on salad just before eating and enjoy :)
* Optional to add Avocado and poached/BBQ Chicken
